1 stick butter (1/2 cup) melted
12 slices of Texas Toast bread
1 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup chopped pecans (optional)
1 teaspoon vanilla extract
5 eggs
1 and 1/2 cups milk (whole, skim, canned, or almond)
1 can apple pie filling

Melt butter and pour in a 9x13 glass pan. Mix brown sugar, cinnamon, nutmeg, and nuts (if you are using them).

Whisk eggs, milk and vanilla together. Layer bottom of the pan with half the bread pieces. Sprinkle half the brown sugar mix over the bread. Remove apples from the can of pie filling and cut them in bite size pieces. Do not use the "syrupy" filling portion, just the apples. Place them evenly over the brown sugar mix bread pieces.

Layer second half of bread. Pour egg mixture over all the bread, making sure all are covered evenly. You will use all of the egg mixture. Sprinkle remaining brown sugar on top. Cover and refrigerate overnight.

In the morning, remove from the refrigerator and cover with a new piece of foil. In a 350 degree pre-heated oven, bake for 30 minutes. Uncover and bake about 15 minutes more. French toast should be browned and set

I usually make this for my Christmas brunch, but also do it if we have guests staying with us. I like this recipe because it is quick to make the night before and makes a terrific morning breakfast! It is so rich and sweet that it does not even need any maple syrup when serving.
