1 package (2 pounds) frozen hash brown potatoes, thawed
1 can cream of mushroom soup
16 oz. sour cream
2 cups Cheddar cheese
1/4 cup chopped onion
1 tsp. salt
1/4 tsp. black pepper
1 green pepper, chopped (optional)
Diced ham or bacon (optional)

Optional Topping
1 cup dry bread crumbs
1/2 cup melted butter

Preheat oven to 350º
In a large bowl, mix together the hash browns, onions, soup, sour cream, cheese, salt, pepper and optional ingredients. Spread mixture in a greased 9 x 13 baking dish. Mix together the topping ingredients and spread over the potato mixture.
Bake for 45 - 60 minutes, or until golden brown.
