1/3 C Finley chopped parsley
2 T Minced fresh Thyme
1 T Dijon Mustard
1 shallot minced
2 T olive oil
4 T softened butter
1 4-6 lb top serloin roast fat trimmed to 14 inch thik
salt and pepper

Directions:
Directions:
1. Prep Herbs Combine parsley,thyme,and shallot in a bowl. Transfer 2 T mix to another bowl and stir in mustard and 1 T olive oil. Add butter to remaining herb mix and mash with a fork to combine.
2. prep Beef Butterfly roast and rub inside and out with salt and pepper. Spread mix over interior and tiewith twine. Refrigerate up to one hour or overnight.
Brown and Roast Ajust rack t middle and heat to 275º. Heat remaining oil and brown roast. Place in a V- Rack and roast for 1.5 t 2 hours registers 125º
