4 tablespoons corn oil
1 ½ cups self-rising cornmeal mix (ie. Tenda-Bake)
¾ cup self-rising flour
1 egg
About 1 ½ cups milk or buttermilk

Directions:
Directions:
Preheat the oven and a cast iron frying pan to 350º. Beat the egg, add 2 tablespoons of the corn oil and one cup of buttermilk. Combine gently with the cornmeal mix and the flour; then add milk to desired batter consistency (think thick pancake batter). Remove hot pan from oven. Add remaining corn oil to pan, then heat briefly on high heat to make sure oil is hot. Pour batter into pan and bake about 20 minutes, until toothpick comes out clean. Broil briefly, if necessary, to brown top.
