1 lb. beef
3 medium beets
2 carrots, sliced
1 medium onion
1 stalk celery
1 bay leaf
1 ½ teaspoon sugar
½ small cabbage, shredded
1 tablespoon vinegar
sour cream
Salt

Directions:
Directions:
Simmer the first seven ingredients (but only ½ the beets) until the meat is tender. Add the rest of the beets, the paste and sugar. Simmer 20 minutes. Discard bay leaf and add cabbage, cooking until tender. Stir in vinegar. Serve with dollop of sour cream and brown bread.
