1 tsp ground coriander
1/2 tsp paprika
1/12 tsp. salt
1/4 c. brown sugar
1/4 tsp. oregano
2 tsp. ground cayenne pepper
4 sushi-grade tuna fillets
1 lime juiced
4 tbsp. coarsely-ground black pepper
Olive Oil
Butter
4 cloves garlic
1/2 med onion, minced
1 green pepper, finely minced
1/2 c. dry white wine

Directions:

In a bowl, combine coriander, paprika, salt, brown sugar, oregano, and cayenne pepper. Dip tuna fillets in lime juice, and cover with dry mixture. Shake off excess, making sure fillets are covered evenly. Coat fillets with black pepper, pressing in to adhere to fillets.

In a skillet, melt butter in olive oil. Add onions, garlic and green pepper, saute over med heat until onions are opaque. Add white wine, increase heat to medium high and cook until reduced by 1/2. Add tuna. Cook 3 minutes each side, or until medium rare. Sprinkle with lemon juice to serve.
