1 lb. thinly sliced meat (beef, elk, goose or duck)
1/3 c. corn starch or rice flour or corn flour
½ tsp. Garlic Salt

1 egg
1/3 c. corn flour
small amount of water added slowly .. enough to make a thin batter.
olive oil

Ginger Sauce:

¼ c. sugar
2 T. cornstarch
1/2 c. water
1/3 c. apricot jam
2 T. thinly sliced fresh ginger root
3 green onions thinly sliced
¼ c. carrots thinly sliced
1 tsp. Red crushed chillies (depending on how spicy you like it)

Directions:
First three ingredients - Dredge or shake up in a bag .. put in oven on a cookie sheet at 350F for 30 minutes. (This step helps dry out the meat and make it chewier in the sauce. If you want the meat to be tender, skip the oven step and go directly to the batter and fry it.)
Make batter and fry oven cooked meat until crispy in olive oil.

Sauce:
Cook sugar, cornstarch and water using medium heat until it thickens, stirring often.
Add jam, ginger, onions, carrots and chillies. Cook until tender.
Add meat, heat through and serve.
