2 1/2 cups flour
1 t. baking powder
1 t. salt
1 stick unsalted butter (softened)
2 cups sugar
2 eggs
1 - 15 oz. container whole milk ricotta cheese
3 T. lemon juice (fresh squeezed)
Lemon Zest - from 1 lemon

Glaze: 1 1/2 cup powdered sugar
3 T. lemon juice (fresh squeezed)
Lemon zest - from 1 lemon

Directions:

Sift together flour, baking powder and salt. Set aside.

Cream together butter and sugar until fluffy. Add 2 eggs. Mix well, Add carton of Ricotta cheese, lemon juice and lemon zest.

2 Tables of dough for each cookie. Bake for 15 minutes until slightly golden brown at 375 degrees. Let rest for 20 minutes before glazing.

Glaze: Mix together powder sugar, lemon juice and lemon zest.

Let glaze harden for 2 hours before packing.
