2 lg apples diced
2 c raisins
2 TB brown sugar
2 TB Lemon juice
2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp salt
2 c chopped pecans
1c sugar
1/2 c butter
2 lg eggs
2 tsp vanilla
4 c flour
4 tsp baking powder
pnich of salt

Directions:
Directions:
Beat sugar, butter, eggs and vanilla in a bowl Mix the dry ingredients together in a separate bowl. Add to the above ingredients and mix well. Roll of the dough on lightly floured board to 1/16th of an inch. Cut the cookies into round discs. Add 1 TB of filling in the middle of half of the disc and cover each cookie with another disc. Place a small slit in the top of each cookie and seal the edges with a fork.
