1 Cup Shortening (or Margarine)
1/2 Cup White Sugar
1/2 Cup Brown Sugar
2 Eggs
1 1/2 tsp. Vanilla Extract
1/2 tsp. Baking Soda
1 tsp. Salt

Option: Replace Vanilla extract with 2 tsp. Cinnamon

Directions:

1. Mix together Flour, baking soda & salt. Set aside.

2. In separate bowl, mix together shortening, both, sugars, eggs, & vanilla thoroughly.

3. Add dry ingredients into wet. Stir until fully incorporated.

4. Put dough out onto wax paper and shape into a long, smooth roll about 2 /2" diameter. Wrap in wax paper, secure ends.

5. Refrigerate for couple hours or overnight.

6. Remove dough from wrapping. Cut into 1/8" slice. Place a little apart on ungreased cookie sheet. Bake for 6 to 8 minutes or until they are light brown.
