24 Fresh Button Mushrooms
1/4 Cup Onion, chopped small
1 TBsp. Butter or Margarine
2 tsp. Flour
1/4 Cup dried Thyme
2 TBsp. Dry White Wine
1/2 Cup Sausage, cooked & chopped small
2 TBsp. Grated Parmesan Cheese
1/4 Cup Breadcrumbs
1/8 tsp. Ground Pepper
2 TBsp Water

Optional: 1/2 small Green Bell Pepper, chopped small

Preheat Oven to 350º

1. Wash & drain mushrooms. Remove stems. Save caps, set aside. Chop Stems into small pieces.

2. Saute stem pieces & onion in butter until tender. Stir in flour, thyme, ground pepper, wine & water. Cook, stirring constantly, until thickened & bubbly. Stir in Sausage & Parmesan cheese, heat through.

3. Fill mushroom caps with mixture. Place fill side up, into lightly greased 15 x 10 x 1 baking dish. Top with Breadcrumbs.

4. Bake at 350º for 15 to 20 minutes. Until tops are crispy.
