1 lb Pasta -- Ziti or Penne work best
2 lb. Tomatoes, plum or regular
Salt & Pepper to taste
Olive Oil
1 large Onion, chopped
2 TBsp minced Garlic
1/2 brick (4 oz) Cream Cheese, cubed
1 Cup Chicken Broth
1/2 Cup Milk
1 Cup Shredded Mozzarella Cheese
1 tsp Herb de Provence
1 tsp Oregano
Grated Parmesan Cheese

Step 1 - Roast Tomatoes:
Preheat oven at 325º

1. Cut tomatoes in 1/2 or 1/4 (according to size), sprinkle with salt, pepper & Olive Oil.

2. Roast in oven for 1 1/2 to 2 hours until squishy, but not too dried out.

3. Use blender, either counter top or emulsion, to blend tomatoes to more of a sauce. Leave a little chunky for texture in sauce.

Preheat oven to 375º
Step 2 - Sauce:

1. Saute Onion & Garlic in Olive Oil until onions are soft. Stir in Salt, pepper, Herbs de Provence & Oregano.

2. Add in roasted tomatoes, cream cheese, chicken broth, milk, mozzarella. Stir together until cream cheese is melted and all is blended.

Step 3 - Combine and bake:
1. Add cooked pasta to sauce. Pour into slightly greased baking dish.

2. Top with Mozzarella & Parmesan cheeses.

3. Bake until cheese is melted & bubbly, about 10 to 15 minutes.

Can make tomatoes ahead of time, they freeze very well and can last. Tip is to make patches up using summer tomatoes for best tasting.
