Lazy Lasagna Recipe

1 lb. Lasagna Noodles
2 TBsp. Olive Oil
1 1/2 lb. Ground Beef
1 Medium Onion, Chopped fine
2 to 3 tsp. Minced Garlic
1 Sprig Fresh Rosemary (or 1 tsp. Rosemary dried)
Sprinkle of All Spice or Ground Cloves
Salt & Pepper to taste
1/4 Cup Tomato Paste
1 Cup White Wine
2 Cups Beef Stock
3 TBsp Butter or Margarine
2 rounded TBsp Flour
2 Cups Milk
Pinch Nutmeg
Grated Parmesan &/or Reggiano Cheese

Step 1 - Pasta:
1. Break Lasagna noodles into pieces and cook as directed on package. Drain and set aside.

Step 2 - Meat Sauce:
2. Heat oil in skillet, cook Beef till brown.
3. Add Onions, Garlic, Rosemary, Cloves (or All Spice) and Salt & Pepper. Cook till Onions are tender, 7 to 8 minutes.
3. Stir in Tomato Paste, cook for 1 minute.
4. Add in Wine, cook till almost evaporated.
5. Stir in Stock and simmer till thickened.

Step 3 - White Sauce:
1. In separate pot, melt butter. Whisk in Flour until fully incorporated.
2. Add in Milk, cook till thickened. It's thick enough when it coats a spoon.
3. Season with Salt, Pepper & Nutmeg to taste.

Step 4 - Combine & Broil
1. Toss cooked pasta with Meat Sauce and pour into lightly greased casserole dish
2. Pour in White Sauce over top. Cover with grated Parma & Reggiano Cheese.
3. Broil on Hi till Cheese is brown & bubbly. About 10 to 20 minutes.

Optional -- add some Ricotta cheese to mix.
Can also substitute 2 jars of Ragu sauce for Tomato paste, wine, stock, & rosemary. Be sure to taste while cooking and adjust spices to taste.
Go light on the Nutmeg in the white sauce, it can be strong if too much is added. Be sure to taste as you go.
