2 1/2 pounds of cleaned calamari tubes and tentacles, tubes cut into 1inch pieces.
1 quart Marinara Sauce
4 cloves of garlic, smashed
1/2 cup sherry wine
Red Pepper flakes to taste
3-4 tablespoons of butter

Directions:
Directions:
Sauté the garlic until light golden brown in a big Dutch oven. Add the calamari and some red pepper flakes. Cook about 2 minutes and then add the wine. Put the lid on and sweat the squid for about 10 minutes. Remove lid and add the Marinara Sauce. Bring to a boil and put the lid on. Transfer to a 325 oven for 1 1/2 hours. Remove lid and reseason with some red pepper flakes if desired. Serve over rigatoni or linguine.
