Salmon steaks or fillets
1-2 stalks rhubarb
2-4 tbsp sugar or to taste
small amount of water

Directions:
Directions:
Wash and cut rhubarb into 1" chunks. Place in saucepan with a small amount of water (a few tbls) and sugar. Bring to a boil and simmer until rhubarb is tender and disintegrates. While rhubarb is cooking and being kept warm, prepare salmon by your preferred method, pan-fried or broiled with olive oil. Do not overcook. Serve sauce poured over salmon.

The first time I tried this I was surprised by how well the two tastes complimented each other. I've tried other fish without much luck.
