3 tbsp. butter
1 egg
2 tbsp. water
1 1/2 pounds of pork boneless shoulder
1 cup of Bisquick baking mix sauce (see below)
4 cups cooked hot rice

Sauce:
1/3 cup packed brown sugar
3 tbsp. cornstarch
1 can pineapple chunks drained
3 tbsp. vinegar
2 tbsp. ketchup
2 tbsp. soy sauce
1 green pepper finely chopped
1 small onion finely chopped

Directions:
Preheat oven to 400 degrees.
Sweet and Sour Pork:
Place melted butter in a 13x9 pan. Beat egg and water slightly. Dip pork cubes into egg mixture then coat with baking mix sauce. Use a bag with 1/3 cup at a time to shake the pork in. Arrange pork in the pan. Bake uncovered for 35 minutes. Turn and bake 15 minutes longer.

Prepare Sauce, stir in pork and heat through. Serve over rice.

Sauce Prep:
Mix brown sugar and cornstarch in 10 inch skillet. Add enough water to reserved pineapple syrup to measure 2 1/4 cups. Stir syrup water mixture, vinegar, ketchup and soy sauce into skillet. Cover over medium high, stirring constantly until it thickens and boils. Stir in pineapple, green pepper and onion. Reduce heat cover and simmer for 5 minutes.
