1/4 cup pure Maple Syrup
1/4 cup Balsamic Vinegar
approximately 1-1/2 Tbsp Dijon Mustard
approximately 3/4 cup Extra Virgin Olive Oil
Salt and Pepper to taste

Directions:
Whisk together maple syrup, balsamic vinegar, and Dijon Mustard. While whisking continually, drizzle in EVOO, until emulsified. Add salt and pepper to taste. For a better emulsification, a food processor may be used, following the same technique.

I don't usually measure the mustard. If the dressing tastes a little tart, I sometimes add up to 1 Tbsp of additional syrup (a little at a time). Nor do I always use the full amount of oil. If the mixture is emulsified after about 2/3 cup, I stop.

Ya can't really mess this one up, it's so easy!!
