1-2 bunches fresh spinach
3 eggs, beaten
6 oz. cottage cheese
2 slices bread, dampened with water. Squeeze excess water out and crumble into pieces.
1/2 cup Parmesan cheese
garlic powder
salt and pepper

Mix all ingredients together. Spread into a flat casserole or a pie dish.
Bake at 350º for about 40 minutes.

This is a side dish that Denise reminded me about. Mary Jane is the one who makes this dish a lot, and she tells me she found the recipe while she was in high school. I just remember mom often making it for us as a side dish.
