1/2 c. shortening
1/2 c. brown sugar
6 Tbsp. sugar
1 egg
1/4 c. milk
1/2 tsp. coconut extract
1 1/2 c. flour + 2 Tbsp.
1/2 tsp. baking soda
1/2 tsp. salt
1 c. shredded coconut
1/2 c. Nutella
1/2 c. white chocolate chips
sprinkles

Instructions
Cream shortening and sugars in a large mixing bowl. Add the egg, milk, and extract and beat well until creamy. Slowly add the baking soda, salt, and flour. Stir in the coconut.
Roll the dough into 1 inch balls and set on wax paper. Make an indentation in the center of each ball. Fill with nutella. Cover the nutella with a small flattened piece of cookie dough. Seal the edges and roll into a ball again. (the dough is very sticky)
Place the dough balls onto an ungreased baking sheet about 2 inches apart. Bake at 350 for 10-12 minutes (or until bottom of cookie is golden brown). Cool on wire racks.
Melt white chocolate chips in microwave safe bowl. Spoon into a plastic baggie and cut the tip off. Drizzle cookies with chocolate and add sprinkles.
