2 c. sugar
4 eggs
1 1/2 c. vegetable oil
2 c. flour
2 t. cinnamon
2 t. baking powder
2 t. baking soda
1 t. salt
4 c. grated carrots
2/3 c. chopped nuts
2 t. vanilla
Icing:
1 8-oz. pkg. cream cheese, soft
1 stick butter, soft
1 box powdered sugar
1 t. vanilla
1/2 c. chopped nuts (optional)

Directions:
Directions:
Cream eggs and sugar together; add oil and mix well. Add dry ingredients which have been sifted together. Blend in carrots, nuts and vanilla. Bake in 9X13-in. pan at 350º for 45-55 minutes.
Mix all Icing ingredients together and spread on cooled cake.
