Ingredients:  
1 lb chicken cutlets cut into cubes

Marinade:
1 T corn starch
1T soy sauce
1 egg white
1 T oil

oil for frying
2 cloves garlic chopped or crushed
12 water chestnuts quartered (1 can)
4 oz fresh mushrooms
1 green or red pepper dices
1/3 C raw cashews
1 tsp salt
2-3 T hoisin sauce
1 T sherry (optional)



Directions:
Directions:
Mix chicken cubes with marinade
Prepare vegetables, keep cashews and garlic separate
Heat wok, add 2 T oil. Stir fry cashews until golden (nuts burn easily), remove
Add veggies, stir to coat with oil, add 1 tsp salt and stir fry 1 minute, remove
Add 1 1/2 T oil, heat, add garlic, site fry until golden and discard (if wanted)
Add chicken, stir fry until no longer pink.
Return veggies and nuts to wok. Add 2-3 T hoisin sauce (and sherry), mix and serve over rice
