Ingredients: 1 3/4 cups flour. 2 tsp. baking soda. 1/2 tsp. salt. 1 1/4 cups cocoa powder. 1 cup(2 sticks) unsalted butter, softened. 1 cup brown sugar. 3/4 granulated sugar. 2 eggs. 1 tsp. vanilla extract. 1 cup white chocolate chips. 1 cup Andes Peppermint Crunch chips.

Directions:1. Preheat oven go 350º and line cookie sheets with parchment or silpat liberal. 2. In a medium bowl, combine the flour, baking soda and salt. Sift cocoa powder and add to flour mixture. Set aside. 3. In a large mixing bowl, cream together the butter and sugars until light and fluffy. Add eggs and vanilla and mix until well combined. 4. Stir in flour mixture until just combined. Mix in Peppermint Crunch Chips and white chocolate chips. 5. Using a medium cookie scoop, drop onto prepared baking sheets. 6. Bake for 9-11 min. cookies will be soft in the middle. Allow cookies to cool on baking sheet for 5 min. before moving to a wire rack to cool completely. |

Notes: *I like to use a fine mesh strainer and sift the cocoa right over the bowl of flour. *You could add broken candy cane pieces to the tops before they cool. *High Altitude: Reduce the granulated sugar to 3/4 cup, add 1 tbsp. flour and decrease the baking soda to 1 1/2 tsp.
