4 sweet potatoes shredded
half white onion shredded
1 Cup Almond meal flour
1 egg
curry powder to taste
pinch of cinnamon
salt to taste
pepper to taste

Keep in mind that these are made during Hanukkah when all foods are meant to be fried in oil. During other times of the year the veggie oil may be substituted or these can also be baked in the oven.

shred the potatoes and place in paper towel lined bowl to soak up extra moisture
shred the onion and place on a paper towel to remove some moisture.
place potatoes, onions, and one egg in a bowl and mix together with hand or spoon
you will add proximately 1 cup of almond flower gradually mixing between additions
the goal is to get the mixture to hold together not too wet or too dry
add any spices you would like- here is your chance to be creative
we do a pinch of cinnamon and curry powder
heat veggie oil over medium heat
form a ball of mixture, place in hot oil and flatten with a spatula
repeat until mixture is gone
they will fry 10 minutes on each side or until browned
enjoy!
