Turkey (12 lbs)

Paste:
½ stick melted butter
salt(lots)
gravy master
Paprika
Onion (large)
Garlic (1 clove)


Stuffing:1 bread (1 lb), remove crust and cube

sauté:
1.5 sticks of butter
turkey liver
¼ lb mushrooms (cut up)
onion (chopped)
celery (chopped)
parsley (chopped)
salt
Paprika
Pepper

kishka (1/2-3/4 lbs, slice 1 inch thick, then cut into quarters)

3 eggs slightly beaten
gravy master (some)

Directions:
Directions:
Wash turkey inside and out, then dry
Rub inside and out with schmutz (paste) the night before
Bake about 20 min/lb (stuffed) at 350º in a brown paper bag
Last 1 hour take out of bag and baste every 15 minutes.

Stuffing: sauté first 9 ingredients.
At end of sauté add kishka.
Pour sauté over bread. Then mix with eggs and Gravy Master.
Lightly stuff turkey just before cooking
The remainder stuffing bake at 350º for 1 hr in buttered casserole (covered)

2012 and 13: 3 22oz loaves of bread, didn't bother removing crust. 2T salt, 3 lbs kishka (but 2.5 would have been enough), 1 lb butter, 8 eggs and 1 1/2lbs mushrooms 3-4 onions, 3-4 stalks celery for stuffing.
20lb turkey paste 1 stick butter, 2T salt and 2 large onions
