1 Pork Shoulder (15 lbs)
2 bottles of dark Beer
6 garlic cloves, crushed
2 tbsp of ground black pepper
1 teaspoon of ground cumin
2 medium spanish onion, diced

Directions:
Directions:
In a large bowl, mix beer with all spaces and onions. In a deep roasting pan, place the meat with the skin side up. Make small deep cuts all around and rub seasoned beer mixture on the surface. Then cover with aluminum foil and refrigerate for 4 hours.

Preheat the oven to 350 degrees and cook the meat for 3 hours. Uncover the pan and raise the oven temperature to 400 degrees for 30 mins. Basting occasionally with marinade from the bottom of the pan until skin is crunchy.

Remove pan from oven and let the meat sit for a few minutes before serving.
