4 Red or Yellow Bell peppers
2 C Ricotta cheese
2 cloves Garlic, minced
1/3 C Feta cheese, crumbles
1 Egg, lightly beaten
2 Tsp Oregano
1/4 C Walnuts, chopped & toasted
3/4 C Bread crumbs
2 Tsp. Olive oil

Place peppers in a large Pyrex pie plate, cover with plastic wrap and microwave for 4-6 minutes on High, rotating them after 2 minutes. Peppers should soften, but not collapse. Cut off the tops and remove the seeds. Leave peppers in the plate with the lids off to the side. In a small bowl, combine ricotta, garlic, feta, egg, oregano, and walnuts. Fill each pepper with this mixture. Mix bread crumbs with olive oil and sprinkle over the cheese filling. Cover the stuffed peppers loosely with plastic wrap and microwave again for 8-12 minutes, rotating them every 4 minutes. The filling should be hot in the center. Remove the plastic wrap and broil the peppers for a minute or so, to brown the bread crumbs. Serve immediately, allowing one stuffed pepper per person.
