Cookies:
1 cup butter (2 sticks) softened
2/3 cup sugar
1 egg
1 tsp vanilla extract
21/2 cups flour
1/2 tsp salt
1/2 tsp lemon zest

Butter cream frosting:
3 C powdered sugar
1/3 C butter, softened
1 1/2 tsp vanilla
1 to 2 T milk

Directions:
Directions:
Cookies: Cream butter and sugar
Beat in egg and vanilla
Combine dry ingredients and add to above
Chill for 3-4 hours or overnight in 2 pieces before rolling

Roll out and cut cookies
Bake at 350º on greased cookie sheet for 8-10 minutes or until slightly colored

Frosting: mix powdered sugar and butter with spoon or electric mixer on low speed. Stir in vanilla and 1 tablespoon of the milk. Gradually beat in just enough remaining milk to make frosting smooth and spreadable. If frosting is too thick, beat in more milk, a few drops at a time.
Frost with butter cream frosting (see note)
