12 oz sliced fresh mushrooms
1-2 cloves garlic, minced
butter
olive oil
flour
salt
pepper
potato water
chicken stock

Directions:
Directions:
Saute mushrooms and garlic in butter and olive oil until mushrooms are well-browned. (This is important). Add flour 1 tbs. at a time too make roux. Brown flour well. You may have to add more butter -- the browning is the flavor!

To roux, add some potato water and chicken stock, stirring constantly until desired consistency. (Be sure to add liquid slowly. (You cannot add more flour once the liquid is added because the gravy will taste like flour.)
