2 lbs. Italian sausage, casings removed 9mild or hot)
1 small onion, chopped
4 cloves garlic, minced
1 (28 oz) cans diced tomatoes
2 (6 ox) cans tomato paste
2 (15 ox) cans tomato sauce
2 cups water (for a long period of simmering for flavors to meld, If you don't want to simmer it as long, add less)
3 tsp. basil
2 tsp dried parsley flakes
1 1/2 tsp brown sugar
1 tsp salt
1/4 - 1/2 tsp crushed red pepper flakes
1/4 tsp fresh coarse ground black pepper
1/4 cup red wine 9a good Cabernet)
1 lb. thin spaghetti
Parmesan cheese

In a heavy stock pan brown the sausage, break up as you cook. Drain off fat. Add onions and continue to cook, stirring occasionally until onions are softened. Add garlic, tomatoes, tomato paste, tomato sauce and water. Add basil, parsley, brown sugar, salt, crushed red pepper, and black pepper. Stir well and barely bring to a boil. Stir in wine. Simmer on low, stirring frequently for at least an hour. Simmer longer for better sauce, just be careful not to burn.

Cook spaghetti according to directions. Spoon sauce over drained spaghetti noodles and sprinkle with Parmesan cheese.

I always add a bit of the cooked noodle water to the sauce. It adds great flavor.

This is a great sauce recipe and I use it for all types of Italian dishes. using hot Italian sausage gives it great heat. I always make a full recipe so I have left over sauce to freeze.
