1 c. sugar
1 T. all purpose flour
1/4 tsp. ground mustard
dash of salt
2/3 c. cold water
1/3 c. white vinegar
1 egg lightly beaten
16-18 c. fresh spinach torn
3-4 hard boiled eggs sliced
1/2 lb sliced bacon cooked and crumbled
3 red onions, sliced and separated into rings

In saucepan combine sugar, flour, mustard and salt. Gradually stir in water and vinegar until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Gradually stir a small amount of hot dressing into beaten egg. Then return to the dressing saucepan and stir constantly as you bring to a gentle boil. Drizzle dressing over spinach and toss with hard boiled egg, bacon and onion.
