Whole green tomatoes
Salt brine as below
For every 4 cups of water, mix in 2 tablespoons salt

Variations:
Add whole heads of garlic to flavor the tomatoes and to become pickled themselves.
Add whole peppercorns
Add whole hot peppers (variety to suit your taste)

Directions:
Make enough brine to cover the tomatoes
Using a fork and depending on the size of the tomato give the tomato 6-8 SHALLOW pricks over the surface.
Place in brine, making certain that the tomatoes are completely covered.
Let pickle for 3 – 4 weeks. This recipe can also be made using quartered heads of cabbage, whose cores have been removed.
