5-1/4 Cup King Arthur Unbleached Flour
1 Tablespoon Kosher salt
3/4 Cup (1-1/2 Sticks) unsalted butter, cut into small pieces and chilled or frozen
1-3/4 Cup shortening, chilled or frozen
1 Cup Ice Water

Directions:
Directions:
Using a stand mixer, place flour and salt in bowl. Start mixing on slow, adding a few pieces of chilled butter at a time.

Once all of the butter has been added, start adding the shortening by the spoonful, a little at a time.

Add the ice water, a little at a time. Don't be alarmed if the dough looks too wet at first. Give it a minute and if you need to, you can add a few tablespoons more of flour.

Remove from bowl and wrap in plastic wrap. Refrigerate for at least one hour, up to five days. If you want to keep it for future use, freeze it and that out just before rolling out.
