2 eggs
2 corn on the cob or one can of corn
8 oz. sour cream
3 T. canola oil
1 T. sea salt
1/3 pound cornbread mix
1/4 tsp. baking powder
2 tsp. sugar
1/4 bunch Cilantro
3 jalapeno peppers

Directions:
Directions:
Clean and dice jalapenos. De-stem and chop cilantro. Grate kernels off the cob. Mix together eggs, corn and sour cream. When fully mixed, add the sugar, salt and half the cornbread mix. Add baking powder and remaining cornbread mix. Slowly pour in the oil. Fold in cilantro and the peppers.
Bake at 375º for minutes.
