12 shrimp, peeled and deveined
2 T. butter
2 garlic cloves, smashed and minced
1 cup finely chopped cremini mushrooms or 1/2 large portabello
salt
cayenne pepper
1/4 cup dry sherry (I use cooking sherry)
1/4 cup heavy cream
1 cup grated cheese- cheddar, fontina, Gruyere or a mix
Minced fresh parsley for garnish

Directions:

Steam or sauté shrimp just until they turn pink.

In a medium skillet melt butter and sauté garlic and mushrooms. Add salt and cayenne. When the mushrooms are well browned add the sherry and sizzle off the alcohol about 1 minute. Add cream and let it come to a boil. Reduce the heat to low and add the cheese, stirring constantly until smooth. Toss in the cooked shrimp and stir to reheat.
