1 frozen puff pastry, thawed in fridge overnight
2 Tbl apricot preserves
1 1/2 Tbl Dijon mustard
1/4 cup dried currants (tiny raisins)
1/4 cup shredded Asiago cheese, (found at Publix)
1 (6 oz) package thinly sliced cook ham

Preheat oven to 400 deg. Line 2 baking sheets with parchment paper.
On a lightly floured surface, unfold 1 puff pastry sheet. Use a rolling pin to shape it into a 11x14" rectangle.

In a bowl, combine preserves & mustard. Spread mixture over puff pastry, leaving 1/2 in border. Sprinkle with currents & cheese. Top with ham slices, maintain 1/2 border.

Start on short side and roll up into a spiral. Use pastry brush to lightly moisten edges with water. Pinch to seal seam.
Slice pastry roll into 16 (1/2 in) slices. Place pinwheels on baking sheets. Bake 15 min or until puffed & golden. Serve warm.
