1 9 in frozen deep-dish pie shell
8 oz bacon, cut into 1/2" pieces
1 onion, halved and thinly sliced
salt & pepper
6 large eggs
1 c half-and-half
1 c shredded Swiss cheese

Directions:
Preheat oven to 400º. Using a fork, prick the inside of the pie shell, then bake for 8 minutes. Remove from the oven, lower the temperature to 325º. Meanwhile, in a large skillet, cook the bacon over medium heat, stirring often, until crisp, about 5 minutes: using a slotted spoon, transfer to paper towels to drain. Add the onion and 1/2 tsp each salt and pepper to the bacon fat in the skillet and cook over medium heat until softened, about 5 minutes. Increase the heat to medium-high and cook, stirring, until onion is golden, about 2 minutes. Transfer the onion to the pie shell. In a large bowl, beat the eggs with half-and-half, stir in the cheese and the cooked bacon. Pour the mixture into the pie shell. Bake until set, about 40 minutes. Let stand for 10 minutes before slicing.
