Lasagna noodles (fresh is best!)
spaghetti sauce (meat or meatless)
4 hard boiled eggs
250 grams ricotta cheese
500 kg mozzarella cheese (grated)
250 kg parmesan cheese
1 large bag fresh spinach (approx 10 ounces)
fresh basil
salt and pepper

Prepare ingredients:

• Noodles: boil until al dente if using dried noodles. If fresh, do not precook
• shred hard boiled eggs
• grate parmesan and mozzarella cheese

Layer in large lasagna pan (from bottom up):
• sauce
• noodles
• sauce
• cheeses (parmesan, mozzrella, ricotta)
• grated egg
• fresh spinach (use lots, it shrinks!)
• fresh basil
• noodles

Repeat until lasagna reaches top of pan, then top with sauce and mozzarella cheese

Bake 350º for 45 minutes
Let cool 15 minutes

Serve and Mangia!
