Green Bean Casserole Recipe

1 lb Fresh Green Beans
1 Can French’s Fried Onions
2 TBsp Butter
1 tsp Salt
1/4 tsp Ground Pepper
2 tsp minced Garlic
¼ tsp Ground Nutmeg
1 Cup Chicken Broth
1 Cup Half & Half Cream

Optional: ½ lb fresh mushrooms, sliced
OR pieces or 8 oz. can, drained.

Preheat oven to 400°

Step 1 - Beans
1. Add beans to salted boiling water & cook for 5 minutes.
2. Drain into colander & immediately plunge beans into bowl of ice water to stop cooking. Drain & set aside.

Step 2 - Sauce
1. Melt butter in skillet, (*) add salt, pepper, nutmeg & garlic cook 1 minute
2. Sprinkle in flour, stir to combine, cook 1 minute
3. Add broth & simmer for 1 minute
4. Add Half-and-Half and cook until mixture thickens, about 6 to 8 minutes
5. Remove from heat & stir in ¼ of onions & all of the beans.

Step 3 - Combine & Bake
1. Pour into slightly greased baking dish
2. Sprinkle top with remaining onions
3. Bake until bubbly, approximately 15 minutes.

Optional Step 2 - Mushroom Sauce
1. Melt butter in skillet, add Mushrooms, salt, pepper & cook 4 to 5 minutes, till mushrooms being to soften.
2. Add nutmeg & garlic cook for another 1 to 2 minutes
3. Sprinkle in flour, stir to combine, cook 1 minute
4. Add broth & simmer for 1 minute
5. Add Half-and-Half and cook until mixture thickens, about 6 to 8 minutes
6. Remove from heat & stir in ¼ of onions & all of the beans.

Can blanch beans the day before and save in frig until ready to use. Make sauce fresh for best taste.
