2 cups sifted flour
1/2 tsp salt
1/2 cup butter
1/2 cup shortening
1 1/4 cup brown sugar
1/2 tsp vanilla
1 tsp baking soda
2 tbsp hot water
2 cups quick cooking rolled oats
1/2 cup flaked coconut

Directions:
Directions:
Sift then measure flour, resift with salt. Cream together butter and shortening until light. Add brown sugar gradually beating until blended. Stir in vanilla. Dissolve baking soda in hot water, add to creamed mixture. Stir in flour, rolled oats and coconut.

Form into small balls. Place on ungreased cookie sheet, press cookie ball down with floured fork.

Bake until light brown and set. 325ºF for 15-20 minutes.
