1 9" pie unbaked pie shell
3 eggs
3/4 stick of butter
1 1/2 c. sugar
1 T. flour
1/4 c. lemon juice
Grated rind from 2 lemons
1/4 tsp.salt

Directions:
Directions:
Cream butter and sugar together until fluffy. Add eggs and continue to beat. Add flour,salt, juice; beat again. Pour into pie shell. Bake at 350º for 45 minutes. Top should be medium brown and the pie itself should still "tremble" in the middle. Cool before serving.

This recipe did not originate with Mama, but she was the one who...somehow....found the wherewithal to obtain it from The Hut, a barbecue restaurant in Dyersburg, TN. Her oldest daughters were about 10 and 12 at the time, but the recipe eventually became a favorite of the daughters... and the sons, who were much younger at the time. And then on down to THEIR sons and daughters...and to their "significant others." All the Dawson girls submitted this recipe proclaiming it Robert's favorite dessert. It is a good one, but it is "rich." Eat sparingly.
