3-4 bone-in pork chops
2-3 T butter or lard
2-3 T flour
1 tsp. salt
1 tsp pepper
green chiles (this can be canned green chiles or fire-roasted habaneros)

Directions:
Directions:
Fry the pork chops in the lard, browning them well on both sides. Remove the pork chops and cut the meat off the bone. Set aside.

Meanwhile, brown the flour in the leftover lard. Season with the salt and pepper. Add water and scrape all the drippings off the bottom of the pan. Bring to a boil. Turn down heat.

Add pork chops and chiles. Simmer for 15-20 minutes until thickened.
