1/3 c. each wine vinegar and olive oil
1 tsp. oregano leaves, crumbled
1/2 tsp. coarsely ground pepper
3 to 3.5 lbs. skirt steak, well trimmed of fat but neither rolled nor tenderized (can substitute flank steak for skirt steak)
Salsa fresca (see below)

Salsa Fresca:
4 medium-sized tomatoes, peeled and seeded
2 tbsp. butter
1 onion, finely chopped
1/2 green pepper, seeded and chopped
Salt and pepper to taste

Combine vinegar and olive oil, oregano, and pepper. Place skirt steaks in a deep bowl and pour in the vinegar marinade; mix well. Let stand at room temperature for at least an hour; turn meat occasionally. Lift steaks from marinade and place 4 or 5 inches above a solid bed of medium-glowing coals. Grill for 4 or 5 minutes on a side for rare meat; cut in serving pieces and accompany with salsa fresca.

Salsa Fresca:
Cut tomatoes into large chunks then set aside. Melt butter and saute onion and green pepper until onion is soft. Add tomato chunks when steaks have cooked about 3 minutes and stir just to heat through. Season with salt and pepper. Spoon salsa onto steaks to serve.
