3 c all purpose flour
2 3/4 c sugar
1/2 tsp salt
1/2 tsp baking powder
1/2 c butter flavored shortening (crisco)
2 sticks margarine or butter
5 whole eggs, large size
1 tsp coconut extract
1 tsp rum extract
1 c milk

Directions:
Directions:
Let all ingredients come to room temperature before you start
Sift flour, sugar, salt, and baking powder together three times and set aside
Beat shortening and margarine until light and fluffy
Add eggs one at a time, beating after each one.
Add extracts. Alternately add flour mixture and milk, beginning and ending with flour. It is very important to do it this way
Pour into a tube pan that has been rgreased and floured.
Bake at 325º for one hour and 25 minutes. Remove from oven and let cool for 15 minutes.
