1 lb. pot roast or beef stew pieces
1 800 ml canned tomatoes or tomato juice
1 small can tomato paste
3 stalks celery, cut fine
2 or 3 medium onions, cut fine
3 garlic buttons, chopped fine
1/4 c. (or less) olive oil
1/2 green pepper, fine
1/2 tsp. basil
1/2 tsp. oregano
1 tsp. parsley
A bit of paprika
Salt & pepper to taste

Cut meat into serving pieces, brown in oil over medium-low heat. Add garlic. When meat is brown, add all vegetables except tomatoes and cook until tender. Add tomatoes, herbs and seasonings (hint: using fresh herbs instead of dried will make the sauce taste even better). Let cook slow and long (hours). Refrigerate for at least 24 hrs, then reheat before serving. At that time add enough tomato paste and/or water until you have a desired consistency. Serve on top of spaghetti, top with fresh parmesan. If taking to a pot luck, mix the pasta & sauce and warm at 200ºF for 3/4 hour.

To make it easier: While the roast is browning, I throw all the sauce ingredients, except the tomato paste, into a food processor and turn it into a cold sauce, then I throw it into the crock pot along with the roast and cook it for at least 8 hours.

To make it cheaper: You can make meatballs to use instead of the roast beef:
1 1/2 lbs ground beef
1//2 loaf soaked french bread
1/2 clove garlic
Brown on stove, add to the sauce at the very end of cooking.

This is my Uncle John Kuether's wife's recipe. Her ancestors came from Italy and this is a recipe that has been handed down in her family. Nanny Kuether fixed it every Christmas and we ate it on an evening when Uncle Bill Larson was visiting with a load of Christmas trees for Pappy Kuether to sell on his yard (he did this as charity). So when Nanny called me at Bible college and asked me what I wanted to eat for Christmas, I said "spaghetti." My future husband overheard this request and thought I was nuts! He accompanied me home that Christmas and learned first hand why Luzzie spaghetti is a fine dish to serve for a holiday. Our family usually has served this meal with garlic bread and Aunt Judy's salad: Over ripped lettuce sprinkle oregano, sweet basil and garlic salt. Add room temp. tomato wedges. Over all sprinkle a small amount of sugar. Over that, pour a full 1 T. salad oil and 1 T vinegar - cider is best - then taste and add what is lacking.
