1/2 oz dried porcini with 2/3 c. red wine warm to soak in

4 oz. pancetta
1 # Italian sausage
1 onion fine chop
Italian herbs
tomato paste 1 T.
4 cloves roasted garlic
2 jars marinara
1/4 c. fine chop parsley
1/4 c. Parm grated
Bay leaf
2 anchovy fillets

Directions:
Soak mushrooms 30 min then drain and save liquid. Fine chop mushrooms
Cook pancetta in GOO until crisp then drain. Cook sausage then remove from pan. Cook onions until nearly done, then add mashed garlic, herbs, tomato paste, mushrooms, 1/2 tsp salt with pepper, anchovy. Cook for 2-3 min. then add marinara and bay leaf. Use immersion blender to break larger pieces. Add meats and porcini liquid and bring to boil then simmer until slightly reduced.
When ready to serve stir in parsley and the parm.
Can be refrigerated for up to 2 days
Can serve with spaghetti squash, pasta, or polenta
