1 cup butter or margarine
2 cups brown sugar
2 eggs
1 cup coconut
2 cups oatmeal
2 cups flour
1/2 tsp baking soda
2 tsp baking powder
1 tsp vanilla
pinch of salt
Directions:
Directions:
Cream butter, sugar and eggs. Add coconut, oatmeal, flour, baking soda, baking powder, vanilla and salt. Mix well and roll into walnut-sized balls; flatten with floured fork. Bake at 350º for 8-10 minutes. Makes 4 dozen cookies.
