1 cup Orzo uncooked
1 cup (4oz) Diced feta cheese
3 tbsp Chopped fresh parsley
3 tbsp Chopped fresh basil or dill
1 Large tomato, seeded and coarsely chopped
1/3 cup Olive or salad oil
1/4 cup Lemon juice
1/2 tsp Salt
1/4 tsp Pepper

Directions:
Directions:
Cook orzo according to package directions for al dente. Drain, rinse with cold water, drain again. Add feat, parsley, basil or dill and tomato. In jar with tight-fitting lid combine oil, lemon juice, salt and pepper; cover and shake. Pour over salad and toss until well coated. refrigerate until chilled. Toss again before serving.
