Cut up chicken pieces
4 eggs
2 1/2 cups milk
2 1/2 cups flour
1 tsp baking powder
1 tsp salt
***Carnation evaporated milk

Directions:
Directions:
Brown chicken in hot oil in a cast iron skillet over med high heat. Bake at 350 degrees for 45 minutes, partially covered, such as with an upside down pie tin. Remove from oven. Place baked chicken in a single layer in skillet. This may take two skillets. Prepare schmada batter. Beat eggs gently; add milk. Add dry ingredients and blend thoroughly. Mom's recipe card indicated she might have added some evaporated milk--no measurement! Pour over chicken in skillet. Bake uncovered at 350º for 20 minutes or until browned. Remove from pan and serve.
