sliced green tomatoes to fill unbaked pie shell
1 cup sugar (or to taste)
1/4 cup flour
1 tsp cinnamon
dash of nutmeg (if desired)
top pie crust

Directions:
Directions:
Select tomatoes that are mature and nearing turning color. Peel and remove stem. Slice like apples, using seeds and all, into unbaked pie crust. Combine sugar, flour and spices. Fill pie pan half full of sliced tomatoes, sprinkle with half of sugar mixture. Finish with remaining tomatoes and sugar mixture. Top with rolled out pie crust; crimp edges to prevent leaking.

Bake at 350º for one hour, testing for doneness.
