1 lb. lean sirloin, cut into 1" cubes
2 T. flour
2 t. oil
2 large onions, thinly sliced, about 2 c.
2 c. sliced mushrooms
2 cloves garlic, minced
2 t. tomato paste
2 c. beef broth
4 c. sliced carrots
2 potatoes, thinly sliced, about 2 c.
1 c. 1" green beans
1 T. cornstarch
1 T. cold water
1/4 c. chopped fresh parsley
1 t. salt
1/2 t. pepper

Directions:
Directions:
Coat beef with flour, shaking off excess.
In large pot heat oil over medium heat. Add beef and saute until browned, about 6 minutes. Place on a plate.
Add onions and mushrooms to pot and saute 6 minutes. Add garlic and saute stirring 1 minute. Pour off fat.
Return beef to pot. Stir in tomato paste then broth and salt and pepper.
Add enough water to cover. Bring to a boil and reduce heat to low. Simmer until beef is tender, about 1 1/4 hours. Skim off any foam
Add carrots, potatoes and beans. Cover partially and simmer 15 minutes.
In small bowl, mix cornstarch and cold water. Stir into stew. Increase heat and boil uncovered 1 minute. Sprinkle with parsley and serve.
